Homemade Air Fried Chicken Nuggets that I Dare Say are Better than Fast Food...

Listen, I am not the blogger mom that gives you a hundred different ads to scroll through before she lets you see the recipe so if you just bare with me I won't take much of your time.


I have not always had a great relationship with food, from eating disorders to "finish your plate or that's what you'll be eating in the morning" childhood food and I did not always value each other.


When I started prioritizing counting grams of protein over all other macros my relationship with food got better (but I still did and do talk to a licensed professional about my relationship with food) so I'm going to be sharing some recipes that helped me fuel my body with better food, but also helped me cut out a lot of unhealthy options that have alternatives you can make at home.


There are a couple of things in this recipe that I prefer to do, but that is NOT necessary, you'll see an asterix next to these processes or ingredients.


Ingredients & Things You'll Need
  • Air Fryer

  • 2-3 lbs of chicken (there will be enough for leftovers

  • 1 cup of pickle juice

  • 2 eggs

  • 3/4 cup flower

  • 3/4 cup panko bread crumbs

  • 1 tbsp garlic powder

  • 1/2 tbsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 tbsp powdered sugar*


Better than Fast Food Chicken Nuggets

  1. Start off with cubing and brining your chicken breast a minimum of 5 hours before or if you're like me, prep the night before and let them sit for 8+ hours. I like to use pickle choose to brine my chicken, but I would also ask for pickle juice as the drink at my last meal, so take that how you will.* You will want your chicken breast cubes to be approximately the same size, about one inch for even cooking.

  2. Preheat your airfryer at 400 degrees for 5 minutes.

  3. In a small bowl crack both eggs and whisk. Set aside.

  4. In a medium bowl mix together the flour, bread crumbs, garlic powder, salt, pepper, paprika and powdered sugar.

  5. Drain chicken from the pickle juice.

  6. Place chicken cube in egg, then breading and add to air fryer.

  7. Repeat this process until all chicken is coated.

  8. Set air fryer to 400 degrees for 8 minutes, when timer goes off flip chicken pieces in air fryer and recook for 5-6 minutes.

  9. Serve with your favorite dipping sauce.
